Basic Egg Pasta
INGREDIENTS:

- 3 eggs
- ½ teaspoon salt
- 2 cups high grade flour OR 1 Cup high grade flour and 1 Cup of semolina flour
- 1 Tablespoon olive oil
METHOD:
By Hand
- Place sifted flour in a mound on a bench. Make a well in the centre for remaining ingredients.
- Mix the liquid ingredients together with a fork then gradually continue to mix in the flour until the dough becomes like a thick batter.
- Bring the remaining flour and dough together with your hands. Knead the dough with the palm of your hand, absorbing any sifted flour until the dough is smooth and elastic.
Food Processor Method
- Fit the food processor with metal blade. Put the eggs and salt into the processor and process for 10-15 seconds until well blended.
- Add almost all the flour, leaving about two tablespoons out. Process on full speed, adding the remaining flour down the feed tube until the dough forms a pliable mass that will ride around the central shaft. Process for 20 seconds.
- Turn the dough and bring together into a smooth ball. Dust lightly with flour, place in a plastic bag and allow to rest for about 30 minutes. Do not refrigerate the dough
