Berry, Apple and Granola Muffins 

Using Sprink; the best baking spray! 

Ingredients

2 cups wholemeal self-raising flour
1/2 cup Rapadura sugar or us brown sugar as a substitute
2 eggs 
1 cup butter milk 
2/3 cup light flavoured extra virgin olive oil
1 tsp vanilla extract 
1 small granny smith apple 
3 cups frozen berries (We recommend blueberries) 
1 cups of store bought granola 


Method 

  1. preheat oven to 180°C and grease muffin tin (makes 12 large muffins)
  2. Place the flour, sugar, eggs, buttermilk, oil, vanilla, apple, berries in a large bowl and mi until just combined. 
  3. divide mixture evenly into muffin tin. 
  4. Sprinkle with granola 
  5. bake at 180°C for 25-30 minutes
