Cheese and olive bread
Cook time approximately 2 hours

Quick tip - To speed up rising time place in warm oven approximately 40°C
Ingredients
4 cups flour
1 teaspoon salt
1 1/2 cups warm water
1 1/4 cup grated cheese
7 ounces olives, halved
Olive oil
Method
- in a standard mixer (Kitchen Aid sold in store) fitted with the bread hook, combine flour, yeast, salt and 1 cup water. mix briefly until combined.
- Add remaining water, 1 cup of cheese and olives. Mix until dough is thoroughly combined.
- Place in bowl which has been brushed with olive oil and dusted with flour. Cover with plastic wrap and leave to rise in a warm place, until tripled in size and the dough springs back when touched - About 3-4 hours.
- Place dough in Le Creuset Dutch oven or large loaf tin which has been brushed with olive oil. Sprinkle with remaining cheese.
- Cover and bake for 30 minutes.
- Reduce heat and continue to bake until golden brown.
- Allow bread to rest for 20 minutes. Transfer to cooling rack before slicing.
