Cheese and olive bread

Cook time approximately 2 hours
Preheat oven

Quick tip - To speed up rising time place in warm oven approximately 40°C 

4 cups flour
1 teaspoon salt
1 1/2 cups warm water 
1 1/4 cup grated cheese
7 ounces olives, halved 
Olive oil


  1. in a standard mixer (Kitchen Aid sold in store) fitted with the bread hook, combine flour, yeast, salt and 1 cup water. mix briefly until combined. 
  2. Add remaining water, 1 cup of cheese and olives. Mix until dough is thoroughly combined. 
  3. Place in bowl which has been brushed with olive oil and dusted with flour. Cover with plastic wrap and leave to rise in a warm place, until tripled in size and the dough springs back when touched - About 3-4 hours. 
  4. Place dough in Le Creuset Dutch oven or large loaf tin which has been brushed with olive oil.  Sprinkle with remaining cheese. 
  5. Cover and bake for 30 minutes. 
  6. Reduce heat and continue to bake until golden brown. 
  7. Allow bread to rest for 20 minutes. Transfer to cooling rack before slicing.
