Cherry Tomato Tart with Olives 


1 T olive oil 
1/2 onion finely chopped
200g bacon 
Salt and pepper to season 
1/2 cup white wine
Packet puff pastry 
1 pack cherry tomatoes
1/2 cup black olives
100g grated cheese 
2 tsp thyme 


  1. Heat the oil in a sauce pan and saute the onion until soft, but not browned.
  2. Add the bacon and stir until cooked through season with salt and pepper.
  3. Add the white wine and simmer until evaporated remove from heat and cool slightly. 
  4. line a greased pie, flan or slice tray with puff pastry.
  5. Spread the onion mixture over the pastry and place the cherry tomatoes and olives on top. 
  6. Sprinkle with grated cheese and thyme. 

    Bake low in oven at 200-220 degrees.
    Allow too cool before slicing. Serves 6-8 people
