
Cherry Tomato Tart with Olives

Ingredients
1 T olive oil
1/2 onion finely chopped
200g bacon
Salt and pepper to season
1/2 cup white wine
Packet puff pastry
1 pack cherry tomatoes
1/2 cup black olives
100g grated cheese
2 tsp thyme
Method
- Heat the oil in a sauce pan and saute the onion until soft, but not browned.
- Add the bacon and stir until cooked through season with salt and pepper.
- Add the white wine and simmer until evaporated remove from heat and cool slightly.
- line a greased pie, flan or slice tray with puff pastry.
- Spread the onion mixture over the pastry and place the cherry tomatoes and olives on top.
- Sprinkle with grated cheese and thyme.
Bake low in oven at 200-220 degrees.
Allow too cool before slicing. Serves 6-8 people
