      Christmas Cookies

INGREDIENTS:cookie.jpeg

 

-          250 grams butter

-          2 tablespoons lemon rind

-          ¾ cup caster sugar

-          1 egg

-          1 tablespoon water

-          2 ½ cups flour

-          Vanilla essence

-          Crushed boiled lollies

 

METHOD:

 

  1. Beat butter, rind, essence and water in a small bowl.
  2. Add the dry ingredients and knead until smooth
  3. Roll out dough between baking paper until 4mm thivk
  4. Cut into shapes and then cut a 2cm hole in the centre of the biscuits
  5. Bake for 5 minutes at 180°
  6. Remove and add crushed boiled lollies to the centre.
  7. Return to the oven and bake for another 5 minutes or until lightly golden.
