Christmas Cookies
INGREDIENTS:
- 250 grams butter
- 2 tablespoons lemon rind
- ¾ cup caster sugar
- 1 egg
- 1 tablespoon water
- 2 ½ cups flour
- Vanilla essence
- Crushed boiled lollies
METHOD:
- Beat butter, rind, essence and water in a small bowl.
- Add the dry ingredients and knead until smooth
- Roll out dough between baking paper until 4mm thivk
- Cut into shapes and then cut a 2cm hole in the centre of the biscuits
- Bake for 5 minutes at 180°
- Remove and add crushed boiled lollies to the centre.
- Return to the oven and bake for another 5 minutes or until lightly golden.
