Christmas Pudding
INGREDIENTS: 
- 1 cup rolled oats
- 1 cup milk
- 1 egg
- 2 \tablespoons warmed golden syrup
- 400 grams mixed fruit
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon mixed spice
- ½ teaspoon ground cloves
- ½ teaspoon lemon essence
METHOD:
- Pour the milk over the oats, leave while assembling all the other ingredients.
- Add remaining ingredients then spoon mixture into 8 small buttered or sprayed ramekins.
- Cover each with foil, folding down the sides.
- Cook at high pressure for 20 minutes then unmold and serve with rum flavoured whipped cream or Wild Country “Christmas Conserve”
