          Christmas Pudding

 

INGREDIENTS: pud.jpg

 

-          1 cup rolled oats

-          1 cup milk

-          1 egg

-          2 \tablespoons warmed golden syrup

-          400 grams mixed fruit

-          1 teaspoon baking soda

-          1 teaspoon cinnamon

-          1 teaspoon mixed spice

-          ½ teaspoon ground cloves

-          ½ teaspoon lemon essence

 

METHOD:

 

  1. Pour the milk over the oats, leave while assembling all the other ingredients.
  2. Add remaining ingredients then spoon mixture into 8 small buttered or sprayed ramekins.
  3. Cover each with foil, folding down the sides.
  4. Cook at high pressure for 20 minutes then unmold and serve with rum flavoured whipped cream or Wild Country “Christmas Conserve”
