1C Dried apricots
100g Ground almonds
1/4 Sunflower seeds
2 TBSP Desiccated coconut (1/3C extra for coating)
Zest of 1 Orange
1 TBSP Honey
3 TBSP Coconut oi
1. Place apricots, ground almonds, sunflower seeds, desiccated coconut & orange zest into a food processor & blitz into a fine crumb.
2. Add honey, coconut oil & a squeeze of juice from half an orange & pulse until mixture is blended.
3. Roll into 3cm in diameter balls & roll in desiccated coconut.
4. Store in air tight container & chill for 1 hr or until firm. Best kept in the fridge.
