Lavender and Honey Madeleines 

Using Madeleine tray, Sprink and Puriti Honey - all available in store. 

1/2 cup plain all purpose flour 
1/2 tsp baking powder 
1/2 cup caster sugar 
1 tsp of edible dried lavender 
2 eggs 
80g Butter, melted
1 TSP Puriti Honey 
1 tsp vanilla bean paste or vanilla extract

Lavender Sugar 
1/2 cup white sugar 
2 tsp edible dried lavender 
To make lavender sugar, place the sugar and lavender in a medium bowl and rub with your fingertips to combine.


  1. Preheat oven to 180°C fan bake. Lightly grease your madeleine tin
  2. Place flour, baking podwer, sugar, lavender, eggs, butter, honey and vanilla into a bowl and whisk until smooth. 
  3. Spoon mixture into the tins and bake for 8-10 minutes or until puffed and golden. 
  4. Remove from tin while still warm add them to the lavender sugar and gently toss to coat. 
  5. Place on wire rack to cool before serving
