      Perfect Whipped Icing 

 

INGREDIENTS: whipped.jpg

 

-          1 cup caster sugar

-          ¼ cup water

-          ¼ teaspoon cream of tartar

-          3 eggs whites

 

METHOD:

 

-          Pace sugar, water and cream of tartar in a saucepan over high heat and stir until the sugar has dissolved.

-          Bring to the boil, reduce heat and then simmer for three minutes

-          Beat egg whites with an electric mixer until soft peaks form

-          While still beating, slowly add the sugar mixture and beat until thick and glossy.

-          Flavour or colour may be added at this stage.

 

This will make enough icing for one large batch of cupcakes.
