INGREDIENTS
125gms Butter
1/2 Cup Self Raising Flour
1 2/3 Cups Icing Sugar
1/2 tsp Baking Powder
1/2 Cup Ground Almonds
3/4 Cup Desiccated Coconut
5 Egg Whites
12 Raspberries
Icing Sugar, to serve
Pre heat oven to 175degrees celcius
Melt the butter and leave to cool until just warm
Sift together the flour, icing sugar,and baking powder, then stir in the ground almonds and coconut
Whisk the egg whites until fluffy but not stiff
Fold into dry ingredients, then fold in melted butter and set the mixture aside for 10 minutes
Spray your FRAIND tin with SPRINK
Pour the mixture in, add a berry to the centre of each. No need to push down as they sink, and bake for 20 minutes
Cool on a rack before tapping out of the moulds
Dust with icing sugar froma height to nice a fine sprinkle
