
Marinade
1 cup of sweet chili sauce
1/3 cup soy sauce – dark or light
Pepper to taste – the soy has enough salt
1/3 cup of Worcester sauce1 cup fresh tomato sauce
4 shanks approx. – depends on size of shanks
Puree all the ingredients except the tomato sauce and marinate the shanks in puree for as long as you like – 10 minutes, 1 hour, 1 day.
Put the cooker on high and add a little oil and brown the shanks. Add the rest of the marinade, then the tomato sauce to 2-3cm high in the cooker.
Put the lid on and bring to pressure. Cook for 25-45 minutes.
25 minutes – shanks are cooked firm, good for reheating whenever
45 minutes – the meat is falling off the bone as if it were cooked for 8 hours! Serve on garlic mash
