Red Velvet skillet brownies

Using Lodge cast iron 26cm skillet pan 

Ingredients

200g butter 
1 block Whittakers 72% Dark chocolate 
3/4 cup plain flour 
2 TSP cocoa 
1 1/2 cups brown sugar 
3 eggs 
1 1/2 TSP red food colouring 
1 tsp vanilla extract 

Method 

  1. Preheat oven to 180°C fan bake
  2. Place butter and 3/4 chocolate block (chopped) in a sauce pan over a medium heat. Stir until melted and smooth. 
  3. Add flour, cocoa, sugar, eggs, food colouring and vanilla - whisk to combine. 
  4. Transfer mixture to greased skillet and top with remaining chocolate. 
  5. Bake for 20-25 minutes or until set but slightly soft in the middle. 
  6. Allow to cool slightly before serving.
