2 Cups Self-raising wholemeal flour
1 tsp Mixed spice
1 tsp Cinnamon
1/3 tsp Nutmeg
1/2 Cup Raw sugar
2 Eggs
1 Cup Buttermilk
2/3 Cup Light Extra virgin olive oil
1 tsp Vanilla extract
1 Small Granny smith apple (grated)
6 Fresh Figs (peeled)
1 Cup Granola (store bought)
Preheat oven to 180c.
Place the flour, mixed spice, cinnamon, nutmeg, sugar, eggs, buttermilk, oil, vanilla, grated apple & fresh figs (diced) into a large bowl & mix until combined. Divide the mixture between 12 x 1/2 cup - capacity, lightly greased muffin tins. Sprinkle with the granola.
Cook for 25 - 30mins or until cooked when tested with a skewer. Transfer to a wire rack to cool. Makes 12
